Mayonnaise
Mayonnaise prepared at home ensures quality ingredients and healthy fats make their way into your loved-one's tummies. When paired with other nutrient-dense foods, healthy fats help our bodies with the assimilation of those valuable nutrients. Avocado oil is our preferred fat for mayonnaise because it has a mild buttery flavor and is packed with monounsaturated oleic acid. It is also high in antioxidants, vitamins, and minerals. The addition of whey and lacto-fermentation to this recipe is optional, but it will give a boost of probiotic bacteria to your recipe as well as extend the shelf life of your end product. Homemade mayonnaise is simple to make and will give your dishes an extra touch of love.
Ingredients
1 whole egg, room temperature
1 egg yolk, room temperature
1 teaspoon dijon mustard
the juice of one lemon
1 tablespoon whey (optional)
1/2 teaspoon unrefined salt
1 cup avocado oil
In a food processor, place eggs, dijon mustard, lemon juice, and whey. Process until combined, about 20 seconds. With the food processor running, begin adding the avocado oil a drop or two at a time. After a minute allow the oil to pour into the food processor in a thin, steady stream until it has all been incorporated. Adjust the salt and lemon juice, if needed. If the whey was added, let the mayonnaise sit at room temperature for 7 hours. Store in the refrigerator. With the addition of whey, homemade mayonnaise will last a couple months. If you did not add whey, mayonnaise will last for 2 weeks.
Using the above recipe as a base, mayonnaise can be flavored with herbs and spices to liven up traditional mayonnaise.
Herbed Mayonnaise: one cup of mayonnaise and 1/2 cup fresh chopped herbs
Chipotle Mayonnaise: one cup mayonnaise, 1/2 teaspoon chipotle chili powder and 1/4 teaspoon garlic powder
Curried Mayonnaise: one cup mayonnaise, 1/4 cup raw sour cream, 2 teaspoons raw apple cider vinegar, 1 tablespoon curry powder
