Coleslaw
Preparing coleslaw at home is very simple; especially with the help of a food processor to shred the cabbage. Full of enzymes and healthy fats, this classic side dish is super nourishing. If you have a crowd to feed, simply double the ingredients.
INGREDIENTS
1/2 head green cabbage, shredded
1/2 head purple cabbage, shredded
3 carrots, grated
3/4 cup quality mayonnaise, such as homemade or primal kitchen
3-4 tablespoons raw apple cider vinegar
2-3 tablespoons dijon mustard
1 1/2 teaspoons celery seeds
monk fruit sweetener to taste
unrefined salt and pepper to taste
fresh herbs such as parsley, dill, or basil, chopped (optional)
Add all of the veggies to a large mixing bowl. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, dijon, celery seeds, stevia, salt, and pepper. Incorporate the dressing into the veggies. Top with fresh herbs. Store in the refrigerator.
