Pumpkin Pie Smoothie
While autumn ushers in a season cooler temperatures, cozy layers, falling leaves, and warm drinks, sometimes a smoothie with fall flavors is fitting. Our family enjoys this smoothie during this season as a quick, convenient lunch or nourishing snack on the go. We love adding coconut oil or MCT oil for an extra dose of nourishing, brain-fueling, energizing fats as well as collagen for its gut-soothing properties.
INGREDIENTS
2 cups or 1 can full-fat coconut milk
3/4 cup pumpkin puree
1 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
1 tablespoon coconut nectar, monk fruit sweetener, or black strap molasses
a splash of vanilla
a few ice cubes
1-2 tablespoons coconut oil or MCT oil (optional)
1-2 tablespoons collagen (optional)
1 heaping scoop vanilla paleo protein or paleo meal
Add all of the ingredients except the protein powder to a high speed blender and blend until smoothie. Add the protein powder to the jar and blend on low until incorporated. Serves two.
