Yogurt Parfait

 

This is not really a recipe as much as a source of inspiration for incorporating probiotics from cultured dairy, healthy fats, and fiber into your diet.  

A quick nutrition profile for the ingredients.....

Yogurt prepared with raw milk from grass fed cows in an excellent source of probiotics and enzymes.  Valuable nutrients such as calcium, B vitamins, vitamin A, vitamin D and omega-3, omega-6, and omega-9 essential fatty acids are found in full-fat grassfed dairy.   Additionally, conjugated linoleic acid (CLA) can be found in full-fat grassfed dairy which has numerous health benefits including anti-inflammatory properties, immune system support, blood sugar balance, and reducing body fat.

Tiger nuts are a starchy tuber that have been consumed for ages.  They are typically well tolerated by those with food allergies and sensitivities. Tiger nuts are an excellent source of resistant starch which means they have prebiotics which feed beneficial gut bacteria.  Additionally, tiger nuts have a great fatty acid profile with the majority being monounsaturated fatty acids.  Tiger nut flakes are a bit easier to chew and give a great consistency to the parfait. 

Chia Seeds are a great source of dietary fiber, omega-3 and omega-6 essential fatty acids, antioxidants, calcium, zinc, and B vitamins, as well as vitamins A, E, and D.

Hemp Seeds are an excellent source of omega-3, omega-6; namely alpha-linoleic acid (ALA), and gamma-linolenic acid (GLA) which are anti-inflammatory and supportive of cellular health. They are also an excellent source of magnesium, fiber, and quality amino acids. 

 

INGREDIENTS

Yogurt

Fresh organic fruit

Chia seeds

Hemp seeds

Tiger Nuts

Whole-Food Fiber blend

Raw honey or maple syrup

 

To prepare a chia seed pudding, soak 2 tablespoons of chia seeds in 1/2 cup raw milk, or coconut milk an hour before putting the parfait together.  This can also be done overnight.  When ready to put together the parfait, simply layer your desired ingredients in an individual serving dish.  I love putting out a variety of fruits, yogurt, nuts, seeds, and whole-food fiber blend so that my family and guests can make their own parfait.  To do this, simply scale the chia seed pudding ingredients up to accommodate your company.
