INGREDIENTS
Cashew Coconut Energy Bites
4 cups pitted dates
3/4 cup shredded coconut
3/4 cup organic cashews
2 tablespoons coconut oil, melted
1 tablespoon vanilla extract
a generous pinch unrefined salt
Chocolate Energy Bites
4 cups pitted dates
2 cups walnuts
1/2 cup cacao
2 tablespoons coconut oil, melted
1 tablespoon vanilla extract
a generous pinch unrefined salt
INSTRUCTIONS
Fit a food processor with a metal blade. Add all ingredients to the food processor and process for about a minute. Form into bite-sized balls and roll into cacao or shredded coconut, if desired. Store in an air-tight container in the refrigerator.
