Recently, we had a birthday party for one of our daughters. Many family birthdays have been celebrated while abiding by a gluten-free, grain-free, and dairy-free diet. Thankfully we never feel deprived. I’ve developed many recipes to accommodate our dietary needs while still indulging in a celebratory treat. Our little lady requested a chocolate fruit dip for her birthday party. This decadent recipe was the result. Simple, nourishing, and delicious. It was a hit!
Ingredients
1 cup chocolate chips*
1 cup coconut cream
2 teaspoons vanilla extract
a pinch of unrefined salt
1/4-1/3 cup non-dairy milk such as coconut, almond, or cashew
Method
In a double boiler, gently melt the chocolate chips. Once they are melted, stir in the coconut cream, vanilla extract, salt, and 1/4 cup of milk. Stir until well-combined. Thin our with additional milk or water until your desired taste and consistency is achieved. Transfer to the refrigerator. When ready to serve, let the dip sit out at room temperature for at least 15 minutes to soften.
*The chocolate chips you choose will depend on your dietary needs. Our family does well on a low-sugar, low-carb diet so we like Pascha and Artisan Kettle Keto chocolate chips. Enjoy Life and Lily’s are other good options.
